There’s just something awesome about a foil dinner whether it’s out camping, cooked on the grill, or prepared in the oven or Instant Pot. These easy clean up hobo dinners are always a hit.

I’m so excited to be sharing a recipe for a Classic Hobo Foil Dinner from my friend’s awesome new book Foiled! It’s full of meals and treats that are cooked in foil. Dinners, breakfasts and even desserts.

It was so hard for me to decide which one to share but I thought I’d go with the classic.

Classic Hobo Foil Dinner Recipe

This recipe is so easy and so tasty and I just love that you can enjoy it camping or at home!

Hobo Foil Dinner Ingredients

These ingredients are fun to play around with. Since you are bundling things up in separate packages you can easily accommodate the tastes and preferences of different family members or dinner guests.

  • Foil Paper
  • Spray Oil
  • 1 lbs. Ground Beef
  • Onion, sliced
  • 1/2 lbs. Mushrooms, quarted (the original recipe calls for carrots but I had mushrooms on hand)
  • 1/2 C Green Beens
  • 1 C Potato (about 1 medium potato), sliced
  • 1 can Cream of Chicken Soup

How to Make Hobo Foil Packets

  1. Preheat oven to 350 F or heat up stove or campfire. If using the pressure cooker add 1 C water and the trivet.
  2. Prepare 4 pieces of foil about 18 inches long and spray with oil.
  3. Place a spoonful of soup onto the center of each piece of foil.
  4. Layer 1/8 of the potatoes on each piece of foil.
  5. Divide the beef between each packet.
  6. Top with mushrooms, green beans and remaining potatoes.
  7. Sprinkle with salt and pepper to taste.
  8. Top with the remaining soup.
  9. Bring the long edges of foil together and fold down twice to seal.
  10. Then fold over the short ends twice on each side.
  11. Place on a cookie sheet if using the oven. Layer on the trivet if using the Instant pot. And just lay on the grill or in the fire if camping and grilling.
  12. Cook 30-60 minutes check at the 30 minute point. For me using the oven this was the perfect amount of time. For the Instant Pot you will cook on high placing the packets on a trivet over 1 cup water for 30 minutes and then do a quick release. If you want to use your crock pot just set in the crock pot and cook on low for 6-8 hours.

This is such a fun meal to do at home or out camping. It would be great for entertaining and just let guest make their own packets up. The kids will have a blast eating out of the foil and save yourself extra clean up.
