If you’ve seen Disney’s hit movie, Encanto, you’ve probably found yourself singing the lines from “We Don’t Talk About Bruno” over and over in your head.

Perhaps we all feel a little bit like Bruno sometimes–the one who fiercely loves their family but doesn’t always fit in.

And I think every family has something they “don’t talk about” but actually do talk about.

One thing we are going to talk about today is how easy it is to make these fun Encanto cupcakes, featuring Bruno’s vision!

Encanto Cupcakes Featuring Bruno

In the movie, Bruno is part of the family Madrigal, where each member has been given a gift. Bruno’s gift is receiving visions into the future.

His visions take shape in a green glass tablet, which the main character Mirabel later discovers shattered in the sand of Bruno’s room in Casita, the family’s enchanted home.

For these cupcakes, we’re replicating Bruno’s vision glass by making a super easy green candy glass!

Then, the shards of candy will be placed in a simple frosting scattered with brown sugar, to emulate the brown sand.

How to Make Encanto Cupcakes

It’s really easy to make these impressive cupcakes. We’re keeping it simple here with any kind of chocolate cupcakes you prefer–boxed, premade from the store, made from scratch, or whatever floats your boat.

Not only that, but we’re using canned frosting! That’s because the frosting isn’t really the star of the show here–the candy glass is! So we’re going to keep it simple with the other components.

One thing to note: You will need a couple of hours for the candy glass to set, so keep that in mind.

Ingredients You’ll Need:

  • Cupcakes, already baked (any flavor you like!)
  • Canned frosting (vanilla or cream cheese)
  • Green food coloring
  • Brown sugar
  • White granulated sugar
  • Water
  • Light corn syrup
  • Cream of tartar

How to Make it:

Make the Candy Glass. You’ll start by cooking the granulated sugar, water, corn syrup, and cream of tartar in a saucepan on the stove over medium heat.

Attach a candy thermometer to the side of the pan. Slowly bring the mixture to a boil, whisking constantly, until the mixture reaches a temperature of 300F, which is the “hard crack” temperature for candy making.

Remove from heat and quickly stir in some green gel food coloring.

Pour it onto a prepared cookie sheet, using a spatula to spread it to an even thickness as much as possible.

Let it cool for at least two hours so it can set up and harden.

Frost the cupcakes. Mix some green food coloring into the prepared frosting, mixing well to combine so there are no streaks.

Transfer the frosting to a piping bag fitted with a piping tip. Pipe the frosting into a simple swirl on your cupcakes.

Sprinkle with sugar. Sprinkle a small bit of brown sugar onto each cupcake, giving the appearance of sand.

Break the glass. Once your candy glass is hardened, use the back of a spoon to press on it, repeating as you gently break it into shards.

Once you’ve broken the sugar glass, press 3-5 shards into the frosting of each cupcake.

Notes and Adaptations:

  • Be sure to heat your sugar mixture slowly, otherwise the sugar can caramelize, which causes it to turn yellow. When you start slowly, the mixture will be cloudy at first, but will become clearer as it boils.
  • Sugar glass should be stored in a low-humidity area in an airtight container. Because of this, I would recommend adding the shards to the frosting as close to serving time as possible. Exposing it to the moisture in the frosting too far in advance can cause it to soften. Do not store the glass in the fridge.

These "We Don't Talk About Bruno" cupcakes are perfect for an Encanto birthday party or a movie night!

Ingredients

  • For the Candy Glass:
  • 1 cup granulated sugar
  • 6 TBSP water
  • 5 1/2 TBSP light corn syrup
  • Pinch of cream of tartar
  • Green gel food coloring
  • For the Cupcakes:
  • 12 prepared cupcakes, any flavor (from a mix, from scratch, from the store--it doesn't matter!)
  • 16-oz can of white frosting, such as vanilla or cream cheese
  • Green gel food coloring
  • Brown sugar for sprinkling

Instructions

  1. Line a baking sheet with parchment paper or spray with cooking spray.
  2. Combine granulated sugar, water, light corn syrup, and cream of tartar in a medium saucepan, whisking well.
  3. Fit a candy thermometer to the side of the pan. Slowly heat the mixture on the stove over medium heat, continuing to whisk until the mixture comes to a boil (see notes below).
  4. Once the mixture reaches a temperature of 300F (the temperature for "hard crack" for candy making), remove from the heat.
  5. Quickly stir in green gel food coloring (approx. 6 drops, or to your desired color intensity).
  6. Pour the mixture into prepared baking sheet, spreading to an even thickness by tilting the baking sheet or using a spatula to spread. Allow mixture to cool for at least 2 hours, until hardened.
  7. While the mixture cools, prepare the frosting. Combine the white frosting and green food coloring (approximately 12 drops, or to your desired color intensity) in a small bowl. Stir well until fully incorporated and no streaks remain.
  8. Transfer the frosting to a piping bag fitted with a piping tip. Pipe the frosting onto the cupcakes.
  9. Sprinkle a little brown sugar onto each cupcake's frosting to give the appearance of sand.
  10. When the candy glass has hardened completely, use the back of a spoon to carefully break the candy into shards.
  11. Place 3-5 shards of green sugar glass into the frosting of the cupcakes and serve.
